I've been carobnating my own juices for a long time, but have had a hard time finding a line of carbonated 100% juices, though Skylar Haley is now making something called essn which I haven't yet tried. Does anyone know of any other such beverages, or why they seem to be so hard to find?

The Switch. They make a line of carbonated 100% juices like grape, orange mango, lemonade, cranberry ginger, and so on.

Check grocery stores around New Years Eve. You'll find those champagne-looking bottles with sparkling juices in them. I've seen them around a lot this season. My store has them, in flavors like pear, apple, apple cider, strawberry, cherry, and cranberry. They're all 100% juice, just 'sparkling', in other words, carbonated.
