10° South TM Red Teas are brewed from the South African Rooibos herb, Aspalathus linearis. Botanically unrelated to Camellia sinesis, the plant whose leaves are used to make white, green, oolong, and black teas, Rooibos is one of the world's rarest teas. This delicate shrub with bright green, needle-like leaves can be found only in the Cederberg Mountains. Once a year, the leaves are picked, bruised, fermented, then sun-dried. The tea achieves its distinctive red color when the leaves are hammered or crushed during the bruising step.
