Shmaltz Brewery Position – Quality Control Lab Technician

Shmaltz Brewing Company is an award-winning craft brewing company founded in San Francisco in 1996 and reborn in 2013 in Upstate, NY with a new 50-barrel, 20,000 square foot brewery and 1,700 square foot tasting room. We currently brew He’brew beer and distribute our core and seasonal beers to over 40 distributors in 37 states. We also contract brew for well-respected craft beer brands. We are looking for a candidate who has a passion for producing great beer, a positive and cooperative attitude and ability to multi-task and to work independently. You must possess great time management skills, have an attention to detail, and be able to work with a team.

Essential Functions: Lab operations

• Prepare microbiological media plates and tubes for testing using an autoclave

• Collect samples and perform microbiological testing on all critical control points throughout the brewing process

• Differentiate and analyze microbes using laboratory techniques, such as Gram staining and microscopy

• Monitor fermentation through daily gravity readings

• Perform yeast cell counts and viability tests

• ATP swabbing at critical control points • Inspection of package quality during bottling and canning line runs

• Test for carbonation and dissolved oxygen before each bottling run

• Maintain and organize packaging run library of bottles and cans

• Aid in the sensory evaluation of beers regarding ‘true to style’ taste and shelf-life integrity General Responsibilities

• Involvement in Safety Committee and implementation of safe practices in compliance with regulations

• Maintain sanitary and aesthetic cleanliness of lab areas

• Calibrate and maintain instruments and devices

• Collect, analyze, and interpret data; must be able to present results to senior staff members •

Clean and sterilize bottles and glassware • Constantly communicate with all people and all other departments of the brewery

• Assist with troubleshooting production issues

Minimum Requirements:

• A Bachelor’s Degree in Microbiology, Biology, Chemistry, or a related scientific field with a basic understanding of statistical analysis • Laboratory experience is required, with food/beverage experience a plus

• Basic understanding of the brewing process

• Must be proficient with Microsoft Office and data recording/analysis in Microsoft Excel

• Must have strong communication skills with good team dynamics
