JOB SUMMARY: Under the direction of the Head Brewer, the Brewer will be primarily responsible for cleaning, cellar work, and some wort production at Mikkeller Brewing NYC. 

Brewery Duties and Responsibilities:

  • Cleaning and maintenance responsibilities including but not limited to:
    • CIP and tank preparation of all fermentation, brite, serving vessels and draught lines
    • Maintain clean keg inventory
    • Keep an immaculately clean working environment across the entire brewery including the exteriors of tanks, floors, and walls
    • Help ensure mechanical elements of facility are operating properly
  • Assist the Head Brewer in managing cold-side operations including but not limited to:
    • Management of fermentation schedule
    • Dry-hopping and cold-side additions
    • Transfer and/or filtration of finished beer
    • Carbonation
    • Kegging
  • Accurate and consistent record keeping including but not limited to:          
    • Fermentation logs
    • Transfer and process records
    • Lab and QC analytics
    • Packaging records
    • Front of house inventory and rotation
  • Hot side work under supervision of the Head Brewer:
    • Operation of brew house from grain in to knockout
    • Maintenance of the system as needed

Canning Duties and Responsibilities:

  • Operate and maintain a 4-head filler canning line to include:
    • A de-palletizer
    • Seamer
    • Ink jet coder
    • Labeler
    • PakTech applicator
  • Work with the Head Brewer to ensure that the product meets quality standards before and after canning
  • Work with machine operator/truck driver to ensure that packaged product is efficiently taken from the brewery to cold storage at our off-site warehouse

Laboratory Duties and Responsibilities:

  • Ensure safe working environment within the laboratory and brewery
  • Monitor all aspects of fermentation (extract, pH, etc.)
  • Collection and analysis of wort & beer to ensure microbiological stability
  • Measurement of dissolved gases in wort, fermentation, BBT and finished product
  • Yeast Management – brinking, propagation, cell counting and viability testing
  • Final package fill level and seam quality review
  • Monitor proper chemical usage/titrations in brewery, cleaning, packaging operations, etc.
  • Develop, review, and revise SOPs within the QA department
  • Troubleshooting skills and proactive root cause analysis experience and mentality
  • Computer literacy: Excel, Word, Outlook and PowerPoint
  • Data logging and analysis
  • Perform: Forced Diacetyl Tests, Wort Stability Tests, sensory evaluation, Calibration and maintenance of analysis equipment


  • High School diploma or GED equivalency
  • A valid driver’s license and a good driving record
  • Experience cellaring in a production environment required
  • Experience brewing in a production environment preferred
  • Experience operating a canning line in a production environment preferred
  • Ability to operate a forklift
  • Able to read/comprehend written and oral instructions in English
  • Strong attention to detail with the ability to multitask
  • Ability to accurately and consistently record data both in physical records and on computers/tablets
  • Ability to work and communicate effectively within a small team on the floor
  • Ability to work and communicate effectively with management and superiors
  • Ability to maintain professionalism and represent the company both inside and outside of the brewery
  • Passion and strong personal knowledge of the industry and market

Physical Demands:

  • Ability to regularly lift, push, or pull up to 150 pounds
  • Possess the manual dexterity sufficient to operate a wide variety of small hand tools
  • While performing the duties the employee is:
    • Required to stand, crouch, lift and climb ladders
    • Constantly wear appropriate PPE for a given task
