The Catawba | Palmetto Brewing Company is a family-owned brewery, founded in 1999, in the Western North Carolina mountains. As one of the fastest growing breweries in the Southeast, the Catawba family of employees is expanding quickly, too. Our main production facility is located in downtown Morganton. We operate a pilot brewery, tasting room, and private event space in the Asheville South Slope; along with a second Asheville tasting room in Biltmore Village. And in 2017, we opened a new Catawba small batch brewery, tasting room, private event space, and Barrel Program in Charlotte’s Plaza Midwood neighborhood.

In addition to our four Catawba locations, we’ve recently welcomed Palmetto Brewing in Charleston, SC to the Catawba family. South Carolina’s oldest brewery, Palmetto was acquired in December 2017 as our first South Carolina production brewery and tasting room, where it continues to produce Palmetto branded products. Expansion plans call for increased production capacity and a private event space to be added in Charleston soon.

We are now hiring for two experienced positions on our Charleston brewhouse team:

Cellar Operator and Brewer. Please specify the position you are applying for in your cover letter.

Brewer Role:

  • Monitor, record, and evaluate brewhouse and cellar efficiency and performance. Identify and suggest improvements for all brewhouse processes including daily monitoring of brewhouse extract efficiencies and remediation of actual or potential quality
  • Ensure all brewing documentation including TTB spreadsheets, brew sheets, packaging logs are accurately and properly prepared, suitable for regulatory requirements, and submitted in a timely manner including entering data into ERP software.
  • Execute brewing, cellaring and packaging schedule according to plan as needed
  • Maintain flexible schedule
  • Assist QA manager and Head Brewer in completing brewhouse and cellar labs testing including but not limited to: yeast count/viability, wort stability, brewing water chlorine and Ph, wort O2 levels.
  • Complete OSHA trainings (Hazcom, Fork Lift, PPE, Confined Space Entry, Lock Out/Tag Out, Emergency Evac et al)


  • Ensure all brewhouse activities are properly recorded in brewhouse software (EKOS).
  • Monitor and update brewhouse software daily to ensure data being entered on the brewhouse side is updated in a timely manner and correct. Work with brewhouse teams to remediate and re-train if needed.

Outreach / Brand Ambassador

  • Professionally and enthusiastically lead brewery tours
  • Educate other brewery employees in beer and the brewing process
  • Coordinate with brewing and marketing teams to suggest new products, new ingredients, new processes.

Facilities Maintenance: 

  • Diagnose equipment failures or malfunction, and repair when possible.
  • Ensure all brewhouse facilities are clean and clutter free
  • Work with facilities team to plan for new equipment – including updating SOPs, staffing to install and learn to operate, and ensuring safety protocols are all met

Cellar Role:

  • Follow CBC’s Standard Operating Procedures & Safety guidelines and/or direction of supervisors to manufacture products from grain to glass
  • Operate filter and other clarification devices
  • Manage fermentation to the specified time and temperature profiles; carbonate beers to CBC specifications
  • Yeast collection and management
  • Prepare fermentation vessels to receive wort
  • Implement CBC’s cleaning protocols in brewing, fermentation, and packaging 
  • Document brewing, cellaring, and packaging operations per CBC’s processes 
  • Perform necessary QC testing and notify Cellar Lead of out spec results
  • Properly clean and purge tanks to receive beer
  • Fill and process wood-aged beer; assist brewing team as needed
  • Dry hop and special ingredients additions


  • Brewing beer requires schedule flexibility.  CBC staff must be able to react to brewing process requirements at the facility during regular work hours plus nights and weekends.  Nominal lead time for a “call in” would be an hour or less.  
  • Industry events typically occur during evenings and weekends. Staff is required to be at these events at times.      
  • Must be able to lift 55 lbs (i.e. grain sacks) and 150 lb kegs on a regular basis
  • Adhere to all required OSHA regulations and CBC safety regulations that go above and beyond OSHA.
  • Work packaging as needed
  • Complete other duties as needed.
