Zilker Brewing Company is expanding our distribution footprint and offerings in Central Texas and is seeking a talented and experienced lead brewer to add to our team.  Close to downtown Austin, TX; we are an urban brewery with a focus on distinctive small batch brews and a solid core lineup of beer for wider distribution.  Our brewhouse is a flexible 15bbl system with a 2019 output of 3200bbls. 


  • 5 years professional brewing experience (Required)

  • College degree or brewing degree (Preferred)

Leadership Responsibilities and Duties

  • Set a positive example for the rest of the brewery team

  • Manage raw ingredients and other brewing supplies

  • Divide up brewday between brewers in accordance with production schedule

  • Train new brew team members on applicable work

  • Develop new recipes in conjunction with the Head Brewer.

  • Communicate new beer offerings with taproom staff and social media staff

  • Participating in professional organizations and training opportunities

  • Communicate personnel issues with management

Brewing Responsibilities and Duties

  • General cleaning and maintenance of workspace in accordance with cleaning schedule

  • Adherence to documentation practices

  • Evaluation of raw materials and communication of inconsistencies (grain, hops, etc.)

  • Cleaning and sanitization of fittings and small parts

  • Thorough completion of work everyday from start to cleanup.

  • Responsible for all brewing operations including:, wort production, cleaning, yeast handling, brewhouse CIP

  • Ensures the highest quality beer is being created in the facility.

  • Upholds QA/QC standards.

  • Yeast management (harvesting, viability, cell counts, make methylene blue solution, pitching, checking pitch rate)

  • Accurate record keeping.

  • Adherence to documentation practices

  • Properly storing and organizing grain

  • Properly storing and organizing hops

  • Operation and general maintenance of boiler (Turn on/off, blowdown procedures)

  • Once a quarter customer facetime (beer tastings, pint night, events, etc.)


  • Fosters a culture of education, internal collaboration, and continuous process improvement.

  • Contributes to weekly team meetings along with head brewer. 

  • Communicates changes in process, expectations, personnel, equipment, etc. effectively and promptly with all necessary personnel.


  • Critical Thinking/Problem Solver

  • Communicate effectively with cellar team, brewers, and head brewer

  • General knowledge of tools and mechanical skills

  • Good manual dexterity

  • Hold yourself and others accountable

  • Ability to climb ladders and work in confined spaces

  • Physically capable of performing daily brewery work; standing most of the day, crouching, lifting 50LBs +, maneuver 160lbs regularly

  • Forklift operation


All staff will be expected to fill multiple roles as necessary to ensure smooth operation and the success of the brand.  This is the nature of a smaller craft brewery, especially one seeking to grow either in production volume or quality.

  • Willingness to do tasks outside the scope of the Lead Brewer position (cellar work eg.).

  • Contribute ideas to ensure company's long term success

  • Accessible for remote communication in off hours

  • Willing to work staggered shifts as required by the production schedule

  • Willing to work weekends if required by the production schedule.
