Job Summary

The Brewery Operator executes day today brewing and cellar activities, including wort production, transfers, dry hopping, barrel movements, filtration, CIP/COP, sanitation, and accurate batch/quality documentation. The role partners closely with QA/QC and Packaging to hit schedule, yield, and quality targets.

  • Execute Brewing and Cellaring Operations to Spec: Produce wort and beer according to recipe, schedule, and quality specifications (gravity, pH, temperatures, sensory).
  • Maintain Sanitation and GMP Compliance: Clean and sanitize tanks, lines, hoses, and equipment using CIP/COP and GMP practices to ensure food safety and readiness.
  • Ensure Accurate Production and Quality Documentation: Record brewing, cellaring, and quality data accurately and on time to support traceability and compliance.
  • Support Safe and Efficient Production Flow: Follow SOPs, PPE/LOTO, and material-handling standards to support reliable daily operations.
  • Monitor Equipment and Escalate Issues: Identify operating abnormalities early and support corrective actions and preventive maintenance.


Key Responsibilities

  • Lead and act in a manner consistent with our Mission, Vision & Values
  • Execute brewhouse and cellar steps (mash/lauter/boil, transfers, dry hop, barrel in/out, filtration/centrifuge) to SOP.
  • Perform CIP/COP of tanks, hoses, and parts; verify chemical concentrations and rinse endpoints.
  • Record batch data (temperatures, gravities, volumes, QC checks) accurately.
  • Stage, receive, and organize materials (malt, hops, adjuncts) and maintain FIFO and lot traceability.
  • Follow safety requirements: PPE, LOTO, machine guarding, chemical handling, and confined space practices.
  • Support preventive maintenance and basic troubleshooting; escalate issues promptly.
  • Assist Packaging/QA as needed to meet schedule and quality targets.


Required Qualifications

  • Technical brewing knowledge with hands-on brewhouse/cellar experience preferred.
  • Understanding sanitation/CIP, yeast/fermentation basics, and GMPs.
  • Ability to follow SOPs, complete records accurately, and communicate clearly across shifts.
  • Basic mechanical aptitude for safe equipment operation and minor troubleshooting.
  • Ability to work on variable schedules including nights/weekends based on production needs.
