Cathead Distillery, Mississippi’s oldest legal distillery, announced the release of Estate Collection #3: a 7-year Straight Bourbon Whiskey. Crafted exclusively from Mississippi-grown grains, this bourbon embodies the distillery’s dedication to producing quality spirits that represent a strong sense of place.

Crafted from a unique mash bill of 65% corn, 28% wheat, and 7% sorghum grain, all grown in Mississippi, this expression is pot distilled and matured in a blend of American Oak barrels (Char levels 2, 3, and 4). Bottled at cask strength of 111.5 proof, the bourbon has spent seven years aging in Mississippi’s heat and humidity, developing into an earthy and richly nuanced whiskey.

On the nose, it opens with a sweet and earthy bouquet, carrying floral honey and vanilla layered with nostalgic hints of bubble gum and gentle baking spice. The palate is soft, sweet, and nutty, delivering rich notes of molasses and caramel, followed by a warm undertone of almond. Its finish is expressive, with a subtle graininess and flashes of raisin, licorice, and a touch of cinnamon that linger with gentle spice.

“Every grain used was cultivated in Mississippi, and the entire process, from field to bottle, happened right here,” said Richard Patrick, Co-Founder of Cathead Distillery. “The inclusion of sorghum, an ancient grain that can withstand the harsh environments of Mississippi, adds a familiar layer of complexity that speaks to our roots and region.”

At a suggested retail price of $75, the Estate Collection #3 is available in select markets across the South and Midwest, including Alabama, Washington D.C., Florida, Georgia, Indiana, Louisiana, Tennessee, Maryland, Michigan, Mississippi, North Carolina, South Carolina, and Wisconsin, as well as online via Seelbach’s and Cellar.com for nationwide shipping.

With just a seventeen-barrel lot, this limited release is a bold celebration of Mississippi and Cathead Distillery’s ongoing dedication to place-driven spirits. As with every Cathead release, this bourbon reflects the character and authenticity of the American South.

About Cathead Distillery

The first legal distillery in the state of Mississippi, Cathead Distillery was founded in 2010 by friends and blues fans Austin Evans and Richard Patrick. Located in the heart of downtown Jackson, the distillery currently produces award-winning, small batch spirits, including Cathead Vodka, Bristow Gin, Hoodoo Chicory Liqueur, and Old Soul Bourbon Whiskey brands. Cathead Distillery is a James Beard nominated Outstanding Spirits Producer and is celebrated not only for its authentic products, but a strong commitment to their community. The name “Cathead,” a term first coined by Mississippi blues musicians as a nod to respected artists, is the brand’s way of paying homage to the state’s rich musical heritage; in this spirit, Cathead also donates a portion of proceeds to nonprofits that contribute to the region’s abundant arts and culture.
