Cost-effective options include single- and three-day displays featured in SFA Spark Pavilion.
The Specialty Food Association today announced that it has created a new featured area for early-stage brands at the Summer Fancy Food Show and Winter FancyFaire*. Located in Debut District, the “Spark Pavilion” will feature emerging brands that are new to SFA shows and are looking for a low-barrier way to kick-start their tradeshow participation.
Debuting this June at the 2026 Summer Fancy Food Show, the Spark Pavilion introduces previously unavailable exhibiting options, including a one-day kiosk, three-day tabletop, and three-day half-booth space, designed to be a progressive path to full exhibition at a pace that accommodates individual brands’ growth.
The one-day kiosk and three-day tabletop are exclusively available to brands that have not previously exhibited in a Summer Fancy Food Show or Winter FancyFaire* outside of the Spark Pavilion. Businesses that have exhibited at SFA shows through a Partner Pavilion or Incubator Village are also eligible for the three-day half-booth.

SFA and our Board of Directors are committed to expanding the opportunities for emerging brands to exhibit successfully at our shows, an experience that can be transformational in terms of business growth and maturity. We can’t wait to walk the Spark Pavilion aisles this summer and taste the next wave of specialty food innovation.”
In addition to flexible, turnkey exhibit options, Spark Pavilion participants will have exclusive access to monthly tradeshow success sessions, including logistics, buyer expectations, and pre- and at-show promotion. Onsite, “readiness indicators” at these exhibitors’ booths—such as distribution status—will help the exhibitors connect with the right buyers for their stage of growth.
Spark Pavilion participants may also sign up for Maker Prep, SFA’s comprehensive product development, supply chain, and marketing curriculum. Maker Prep participants and graduates are identified and promoted within the Spark Pavilion and across the entire exhibit floor during SFA Events.
