July 23, 2026: Zeronimo, the premium alcohol-free wine brand from Austria's Heribert Bayer winery, announces the U.S. debut of Zeronimo Rosé 2025, a dealcoholized rosé crafted from Blaufränkisch and Zweigelt grapes. The wine is available as a limited edition of 2,600 bottles.
Zeronimo Rosé is made using gentle whole-cluster pressing and classic steel tank aging. The dealcoholization process includes a multi-day aroma recovery method, designed to preserve the wine's natural character and aromas once the alcohol is removed.
"This rosé captures everything we love about the Central Burgenland lifestyle," said Katja and Patrick Bayer, founders of Zeronimo. "It's elegant, expressive, and proof that alcohol-free wine can be just as vibrant and full of personality as any other rosé on the table."
On the nose, the wine offers notes of ripe strawberry frappé, fresh mint, and a hint of orange zest. The palate is full-bodied, with ripe stone fruit, strawberry, and rhubarb leading to a fresh mineral citrus finish. It pairs well with fresh salads, pizza, tarte flambée, antipasti, sushi, and fish dishes.
The Craft Behind the Bottle
Removing alcohol from wine without losing its character is one of the biggest challenges in non-alcoholic winemaking. For Zeronimo Rosé, the team relies on gentle vacuum distillation and an aroma recovery technique that captures aromas that are bound in the removed alcohol. With this process, 100% of the aroma and character of the wine is preserved. Therefore, adding any additives or aromas is absolutely taboo at Zeronimo.
"With rosé, the combination of fruit, freshness, and mineral nuances is everything," said Katja and Patrick Bayer. "The fruit needs to feel alive in the glass. Our process lets us hold onto that brightness even after the alcohol is gone." The result is a wine built for warm weather and easy pairing, with the kind of texture and aromatic depth that often gets lost in alcohol-free alternatives.

Growing Presence in the U.S.
Zeronimo Rosé joins a U.S. lineup that has expanded steadily since the brand's launch in summer 2024. Zeronimo's red blends, sparkling wine, and white have found a following among AF drinkers and traditional wine drinkers alike. The brand's limited-edition Century Blend, a 20-year-aged dealcoholized red wine, also returns to the U.S. market now with its second release, this time 22 years aged.
"We've been overwhelmed by the response from the U.S.," said Katja and Patrick Bayer. "People are looking for something that feels intentional, not like a substitute. Rosé felt like the natural next step for that audience."
