UNDONE is a Hamburg, Germany-based non-alcoholic drinks brand founded in 2018 by André Stork and co-founder Mehmet, debuting at Bar Convent Brooklyn in 2019. Rather than using botanical blends, it starts with real distilled, fermented or infused liquids and removes the alcohol through a patented dealcoholization process. The numbered range includes No. 1 NOT RUM, No. 2 NOT GIN, No. 3 NOT WHISKEY, No. 4 NOT MEZCAL, plus aperitifs, vermouth alternatives and sparkling wines — all under 0.3% ABV, vegan and gluten-free. UNDONE entered the U.S. in July 2025 alongside mixer brand Thomas Henry.
