1. Xanthan Gum

Derived from the fermentation of carbohydrates by Xanthomonas campestris bacteria, xanthan gum is valued for its high viscosity at low concentrations. It improves mouthfeel, suspends solids, and prevents separation in dairy, fruit-based, and plant-based drinks. While it is highly effective, formulators must balance dosage to avoid an overly thick or slimy texture.

2. Carrageenan

Sourced from red seaweed, carrageenan is particularly effective in stabilising protein-containing beverages such as chocolate milk or protein shakes. It prevents casein micelle aggregation, which otherwise leads to sedimentation. Although it has faced consumer perception challenges, regulatory authorities in many regions approve its use within set limits.

3. Gum Arabic

Harvested from the sap of Acacia trees, gum arabic acts as an emulsifier and stabilizer, especially for flavour oils in soft drinks. It helps maintain clarity in beverages and is prized for its ability to stabilise emulsions without significantly altering viscosity.

4. Pectin

Obtained from citrus peels and apple pomace, pectin serves as a gelling agent and stabilizer. In beverages, it is often used to maintain pulp suspension and improve mouthfeel in fruit juices and nectars.

5. Carboxymethyl Cellulose (CMC)

A cellulose derivative, CMC enhances viscosity and prevents phase separation in flavoured milks, smoothies, and juice drinks. Its ability to stabilise suspensions makes it a versatile choice across multiple beverage categories.

6. Others

Locust bean gum, guar gum, and modified starches also play key roles, often in blends to achieve specific textural and stability targets. Modified starches, for instance, are commonly used in high-acid beverages for improved suspension properties.

Beverage stabilizers are utilised across a diverse range of product categories:

  • Fruit Juices and Nectars – Stabilizers keep pulp evenly distributed and prevent sedimentation. In high-pulp juices, they also help preserve a natural, freshly squeezed appearance.
  • Dairy and Dairy Alternatives – Protein stabilisation is critical in both traditional dairy drinks and plant-based alternatives. Without stabilizers, heat treatment during processing can cause protein denaturation and phase separation.
  • Carbonated Soft Drinks – Used to stabilise flavour emulsions, ensuring uniform taste and appearance even under varying storage conditions.
  • Functional Beverages – Nutrient-dense products require stabilizers to maintain an even distribution of vitamins, minerals, and probiotics.
