Dekáf Coffee Roasters, known for redefining decaf with bold flavor and premium sourcing, has officially transitioned its full lineup to exclusively use Swiss Water® Process decaffeination — the gold standard in chemical-free caffeine removal.
This change emphasizes Dekáf's long-standing effort to create a fully transparent, craft-forward catalog that never compromises on taste, quality, or integrity.

Previously, Dekáf's Mexico Ki-Saya single origin was decaffeinated using the Mountain Water Process, a method similarly chemical-free and water-based. While the coffee's regional and flavor profile remain unchanged, the process is now aligned with the rest of Dekáf's offerings under the Swiss Water® name — including the Silent Storm low-caffeine espresso blend, which formerly used a partial Mountain Water component.
Swiss Water® Process is a trusted, proprietary method that uses time, temperature, and pure water (no solvents or additives) to remove 99.9% of caffeine while preserving the coffee's character. Its facility is located in British Columbia, Canada, and serves as a benchmark for decaf transparency worldwide.
All of Dekáf's coffees — including its rotating Roaster's Choice Subscription, Mizudashi Cold Brew Concentrates, and Low-Caffeine Signature Blends — are now 100% Swiss Water® decaffeinated and roasted on decaf-dedicated equipment.
