What is the High Country Appeal? What is High Country Kombucha? High Country Kombucha is a uniquely tasty probiotic beverage. It is a symbiotic culture of bacteria and yeast that feeds on caffeine and sugar. You have to have all three ingredients in order to propagate the final product (Kombucha culture, black tea, sugar). HCK harvests tea at the time when the probiotic and beneficial acids are at there highest activity levels and sugar is at its lowest amount. Our tea is naturally effervescent as a natural byproduct of the bacteria feeding on sugar. Kombucha is not a mushroom. Kombucha is full of beneficial bacterium that provides necessary flora to the gastral intestinal tract allowing you to digest and assimilate your food better. The kombucha culture is not a mushroom.
