BOLLE, the pioneering producer redefining the standards of non-alcoholic winemaking, has unveiled its most ambitious release to date: BOLLE Chardonnay Reserve, a premium alcohol-free wine crafted from 100% Chardonnay grapes sourced from one of France's most prestigious winemaking regions and produced using BOLLE's patent-pending twice-fermented process.
The wine starts as an AOP Burgundy Chardonnay. It is gently de-alcoholised and then re-fermented with fresh Chardonnay juice harvested from the same region, under specific direction from BOLLE in 2025. This unique BOLLE approach naturally rebuilds texture, depth, and complexity without adding sugar, glycerine, flavourings, or aromas, staying true to the fundamentals of fine winemaking.
Until now, alcohol-free wines have rarely begun with fruit of this calibre, nor applied a winemaking approach capable of preserving its integrity. BOLLE Chardonnay Reserve marks a significant step forward for the category, demonstrating that structure, balance, and depth can be achieved without alcohol and without compromise.
The result is immediately evident in the glass. Pale gold in appearance, BOLLE Chardonnay Reserve opens with aromas of green apple, lemon, and lime, layered with white acacia flowers, subtle hazelnut, and a delicate hint of spice. On the palate, vibrant minerality and crisp acidity meet a medium-light body, balanced by gentle roundness and finishing clean, focused, and precise. It is an alcohol-free wine that delivers clarity, finesse, and confidence.

Vanin founded BOLLE with the ambition of challenging the idea that non-alcoholic wine must be simplified or sweetened. Instead, BOLLE takes a winemaker's approach, rebuilding through fermentation. The BOLLE portfolio reflects that philosophy, and BOLLE Chardonnay Reserve brings precise winemaking and gastronomic intent to a category often defined by absence rather than ambition.
