Elmhurst 1925, maker of the world’s finest plant-based dairy products, recently introduced new beverages to its best-selling Barista Edition line and renowned Unsweetened line at Natural Products Expo West 2025: Unsweetened Pistachio Milk, Unsweetened Vanilla Pistachio Milk, Unsweetened Vanilla Cashew Milk, Cashew Barista Edition, and Unsweetened Coconut Barista Edition. Expo West attendees were among the first to see and taste these delicious additions to Elmhurst’s portfolio of clean-label plant-based milks. 

A dairy alternative pioneer, Elmhurst continues to innovate, redefining the category and pushing boundaries without compromising on nutrition or a clean ingredient label. As more consumers are searching for new high-quality plant-based dairy alternatives, Elmhurst is leading the charge in driving innovation around unique ingredient bases including pistachio and cashew. Cashew milk in particular has emerged as a popular choice due to its rich content of essential nutrients, including healthy fats, vitamins, and minerals (source: Fortune Business Insights). With its fan-favorite cashew varieties, Elmhurst has increased its leadership of the cashew market to a 36% share* in the plant-based milk and creamer category and the brand is focused on building on this success with the introduction of these new beverages.  

Joining the brand’s popular Unsweetened line, Unsweetened Vanilla Pistachio Milk and Unsweetened Vanilla Cashew Milk are Elmhurst’s first-ever flavored unsweetened plant milks, perfect for smoothies, coffee, baking, and more. Following rave reviews of Elmhurst’s pistachio offerings (Pistachio Barista Edition, Pistachio Crème Latte and Pistachio Crème Oat Creamer) Elmhurst is also adding an Unsweetened Pistachio Milk to its lineup. Created for everyday use, Unsweetened Pistachio Milk is the cleanest pistachio milk on the market, crafted with just three simple ingredients. Elmhurst’s Cashew Barista Edition and Unsweetened Coconut Barista Edition were crafted with the help of baristas to foam, froth and perform beautifully in any coffee roast using only the simplest ingredients. The addition of these unique varieties of plant-based milks solidifies Elmhurst as a driver of plant-based innovation and highlights the brand's commitment to offering nutrient dense, high-quality milk alternatives in unique varieties.

All Elmhurst products are made without carrageenan, gums, oils, or other emulsifiers, and are Non-GMO Project Verified, gluten-free, dairy-free, OU Kosher, and vegan. Additional details on the new products include:

Unsweetened Pistachio Milk: Formulated with only three simple ingredients – real whole pistachios, filtered water, and Himalayan pink salt – Elmhurst’s Unsweetened Pistachio Milk is the cleanest pistachio milk on the market. With 27 whole pistachios in every glass, Unsweetened Pistachio is a naturally good source of Vitamins B1 and B6 and delivers 3g protein in every serving.

Unsweetened Vanilla Pistachio Milk: Simply crafted with pistachios, Tahitian vanilla extract and a pinch of salt, Unsweetened Vanilla Pistachio Milk delivers 3g protein with a fan-favorite vanilla flavor. 

Unsweetened Vanilla Cashew Milk: Combining Elmhurst’s fan-favorite Cashew Milk and real Madagascar vanilla, Unsweetened Vanilla Cashew Milk delivers the flavors you love with a clean ingredient list and 4g protein per serving.

Cashew Barista Edition: Crafted with Elmhurst’s Cashew Milk as the base, Cashew Barista Edition is simply sweetened with just 1g of added sugar per serving to bring the perfect balance to any roast or blend. 

Unsweetened Coconut Barista Edition: Made from just four simple ingredients – water, real coconut cream, buttery cashews, and a pinch of salt – Elmhurst’s Unsweetened Coconut Barista Edition is the brand’s first ever Unsweetened Barista Edition, delivering an extra smooth and creamy consistency in hot or iced coffee and tea. 

These new beverages, like all Elmhurst products, are crafted through the company’s unique HydroRelease™ method. Using just water, this process separates the nutritional components of a nut, grain or seed before reassembling them as a creamy plant milk, maintaining the full nutrition of the source ingredient without added gums or emulsifiers. HydroRelease™ upcycles any waste into energy and is powered by 100% renewable Hydroelectric Power to drive sustainability every step of the way. 

As part of Elmhurst’s ongoing recycling program, which currently saves approximately 10,000 mature trees annually, all cartons are 100% recyclable and made from FSC-certified paperboard. The brand transitioned from plastic to paper-based shipping materials for direct-to-consumer orders and uses primarily PCR materials for molded fiberboard trays and scrap corrugate as protective filler.

All of Elmhurst’s new items will be available in June with retailers coming soon. Unsweetened Pistachio Milk, Unsweetened Vanilla Pistachio Milk, and Unsweetened Vanilla Cashew Milk will be available at SRPs of $8.99. Unsweetened Coconut Barista Edition and Cashew Barista Edition will be available at SRPs of $7.99.
