AUSTIN, Texas— Uncle Billy’s Brewery & Smokehouse, is expanding its line of distilled spirits with the release of Muddy Water coffee liqueur. The “Brewstillery” on Barton Springs Road first introduced its distilled spirits program in the spring of this year with Uncle Billy’s Bourbon Whiskey and Vodka, followed by ready-to-drink craft cocktails in cans, and is now introducing its first liqueur.
“Making a coffee liqueur is really logical for us,” says Bob Leggett, managing partner of Uncle Billy’s. “We brew espresso and coffee drinks every day. Our customers love our coffee-based cocktails, and it was an easy next step to make coffee liquor using our Uncle Billy’s Bourbon Whiskey. It is a perfect drink in the winter months on its own or in a cocktail.”
The recipe for Uncle Billy’s Muddy Water was developed by head of distilling services, Mark Shilling, and beverage director, Josh Mabry. It is made using Uncle Billy’s Bourbon Whiskey which is sourced from Indiana, and made with a mash bill of 60 percent corn, 36 percent rye, and 4 percent malted barley that is aged 18 months in first use charred American Oak. The whiskey is blended with cold pressed coffee made with locally-roasted Austin Java coffee beans, and all-natural whole vanilla beans to create a sophisticated small-batch craft coffee liqueur.
The dark-roasted coffee beans used in Muddy Water give it an elegant mahogany color, bold distinctive coffee flavor that marries incredibly well with the bourbon for complex, luxurious taste. The dark roast coffee flavors are exquisitely entwined with caramel spicy whiskey flavors, and ample notes of vanilla. It is a rich liqueur that coasts the mouth in velvet viscosity without being overly sweet.
“Getting the recipe just right was incredibly important to us,” says beverage manager Josh Mabrey. “We wanted a liqueur with complexity, concentration, and robust coffee aromas and flavors that only come from the highest quality, freshly roasted and carefully brewed cold press coffee. Excellent coffee is essential to excellent liqueur. Many coffee liqueurs on the market are made with rum or neutral grain spirits. We wanted the extra complexity that whiskey brings. We think we nailed it. Muddy Waters is as comforting as a bear skin rug in front of the fire. It wraps you in a roasty warm hug and gives you a sweet kiss of bourbon bliss.”

Initially, Uncle Billy’s Muddy Water coffee liqueur is only be available for sale in 750ml bottles at the taproom on Barton Springs Road. It will soon be distributed throughout central Texas.
