[Chico, CA] – [June 20, 2025] – All The Bitter, the award-winning cocktail bitters brand founded by former French Laundry sommeliers, announces the grand opening of the All The Bitter Zero Proof Lounge—the first and only non-alcoholic tasting lounge in the U.S. to combine on-site bitters production, educational tours, cocktail flights, a full zero proof bar, local snacks, and a curated bottle shop under one roof.
Located at 144 Meyer St in Chico's vibrant Meyers District, the innovative lounge opens its doors with a mission to create a community around exceptional zero proof drinks, education, and discovery. Operating Tuesday-Saturday from 12 PM to 7 PM, this welcoming space caters to everyone from curious adults seeking sophisticated alcohol-free options to families looking for creative mocktails and engaging activities for children.
"We're creating something entirely new—a place where zero proof drinks aren't an afterthought, but the main event," said Ian Blessing, founder of All The Bitter and former French Laundry sommelier. "This lounge serves as a hub for education, community building, and proving that you don't need alcohol to enjoy complex, sophisticated beverages."
The menu features craft cocktails ranging from classics like the Agave Margarita and Spiced Old Fashioned to functional drinks like the Yuzu Meyer Lemon Drop, made with kava—offering a light buzz, without the alcohol. Guests can also enjoy a variety of tasting flights, including bitters and soda, zero proof cocktails, and non-alcoholic wines. Local snacks highlight the bounty of Northern California, including artisanal cheeses from Point Reyes and Sonoma, almonds from Maisie Jane’s in Chico, and olives from Good Faith Farm.
The All The Bitter Zero Proof Lounge offers three distinct experiences under one roof:
Tasting Lounge: A refined bar setting featuring expertly crafted zero proof cocktails, wines, and spirits—showcasing how All The Bitter's small batch bitters transform every sip.
Educational Hub: Guided tastings and educational tours that explore the world of non-alcoholic beverages, botanical ingredients, and the art of building complex flavor without alcohol.
Zero Proof Market: A carefully curated retail space featuring over 200 non-alcoholic beers, wines, spirits, and functional drinks, alongside locally sourced goods including Maisie Jane’s almonds, artisanal mustard, jam, honey, and olive oil from Good Faith Farm.
The family-friendly space features classic games like checkers, Connect 4, Uno, and Scrabble, along with a treasure box for young visitors—making it a welcoming destination where multiple generations can gather and enjoy quality time together.
Strategically located in the heart of the Meyers District’s entertainment corridor, the lounge sits alongside Secret Trail Brewing, The Commons music venue with wood-fired pizza and self-serve beer taps, and the Golden Beaver Distillery tasting room. Together, they create a unique ecosystem where visitors can explore the full spectrum of beverage culture—from craft beer and spirits to sophisticated non-alcoholic options.
