BuckWHAT! Foods founder Leeann Rybakov aims to be the “Buckwheat Queen” of the snacking industry. The ingredient is the star of her first product line, BuckWHAT! Noshes, which offers grab-and-go snacks that are gluten-free, plant-based and low glycemic. Using simple ingredients such as cinnamon, chia seeds and dates, with no added sugar, the product is targeted toward millennial moms that are looking for convenient, natural snacks to feed their families. While the company is in its early stages of growth, Rybakov is focused on expanding the brand’s reach beyond the New York metro area.
