The search for gluten-free, sustainable alternatives to the typical retail flour tortilla has driven brands to engage almond flour, cassava, and now, coconut. Jeff Klineman talked with Daniella Hunter, who co-founded SANA Foods, a fast-growing brand of coconut-based tortillas that has expanded its line to include Paleo-diet friendly vegan frozen burritos, and also a set of smaller street taco-sized tortillas. The brand came out of Real Coconut Kitchen, a pair of restaurants Hunter operated with her co-founder Charlie Stuart Gay, but its expansion in the U.S. has led the couple to bring on experienced CEO Camille Gibson. Knowing she had the former head of General Mills' cereal business on board, Hunter spoke with BevNET and NOSH Editor-in-Chief Jeff Klineman about plans for the brand, and some of the challenges facing an eco-conscious supply chain during the March, 2022 Natural Products Expo West.
