Five years in the making, kombucha trade association Kombucha Brewers International (KBI) this week released its Code of Practice, a set of safety protocols and quality standards aimed at establishing transparency with consumers amidst a slew of innovative products and rapid category changes.
In an interview with BevNET managing editor Martin Caballero, KBI co-founder and president Hannah Crum discusses the process behind creating the Code, why it does not include a defined alcohol content for kombucha, how KBI will certify companies to be in compliance and why establishing transparency is key to bringing new consumers into the category.
