Aged for 41 months in a single ex-bourbon barrel and bottled at 80 proof, the Extra Añejo Tequila is produced by third-generation distiller Juan Eduardo Nuñez and tequilera Karina Rojo at El Viejito Distillery (NOM 1107) in Atotonilco el Alto, Jalisco. With fewer than 240 bottles available for purchase, Santo’s 2025 Extra Añejo expression is a virtuoso execution of perfectly aged,100% additive-free tequila.
Santo Tequila Extra Añejo is crafted using time-honored methods that focus on preserving the heritage of bold agave flavor from when tequila was first made in Mexico centuries ago. Like all tequilas in the Santo Spirits portfolio, Santo Tequila Extra Añejo is distilled from 100% Blue Weber Agave – both estate-grown and sourced from the highest-quality suppliers in the Highlands region. The agaves are cooked using traditional stone ovens, employing a low pressure/slow cooking method that optimizes the deep, earthy flavor of sweet agave.
From the carefully selected yeast, to the two-stage low-and-slow cooking method, to the precise distillation cuts, the entire Santo production process is tuned towards preserving the traditional flavor of agave-forward tequila. Reinforcing this standard is the fact that Santo Tequila Extra Añejo is 100% additive free, meaning nothing is added to mask the agave flavor or to cover for using bitter, under-aged agaves or shorter aging periods in inferior casks.
Best enjoyed neat, Santo Tequila Extra Añejo is a true sipping tequila. The result of the extra aging is a spirit that is a deep amber color – reminiscent of lightly aged whiskeys. On the nose, it presents a combination of green apple, orange zest, and a hint of butterscotch. The front and full palate are earthy and sweet with notes of grilled sweet corn, bell pepper, citrus and caramel. The finish is a delightful tongue teaser with a subtle touch of coffee and chocolate.
